Made and bottled by Azienda Agricola Castelvecchio in San Casciano, Val di Pesa (Fi)

Technical analysis:

Vine: Cabernet-Sauvignon, Merlot, Sangiovese

Position of the vines: Solatio, facing east-west

Type of soil: alberese e galestro with limestone of marl and sandstone with clayey sands but with a good fertility.

Altitude: 250-350 meters (above sea level)

Plant breeding method: horizontal 'ramming' cord

Grape production per hectare: 60 Q.li

Vintage: at the end of September, chosen grapes, hand-picked

Fermentation: stainless steel vats and controlled temperature, with daily remounts and a slow-acting maceration.

Aging: French barriques for 12 months.

Organoleptic analysis:

Colour: deep ruby red tending towards garnet/burdundy with age.

Bouquet: complex, very fruity, suggestion of ripe red berries with hints of wood, spices and vanilla.

Taste: Harmoniously blended, rich and full-bodied, long and persistent, some tannin, but round and soft with a pleasant level of acidity.

Effective alcohol metric content: 13, 5% vol.

Serving suggestion: suitable with red meat, roasts, ripe cheese and spicy dishes.

Notes: uncork the bottle at least 2 hours before serving. Serve at 18-20 degrees C/66-68 degrees F.
